FINALLY WINTER!
Imagine laying on your couch after a rough, grey and rainy day. You’re watching your favourite TV show while drinking your favourite tea or coffee and you’re eating the best apple crumble muffin in town - homemade by yourself! (Not only is it looking super delicious it also smells fantastic).

Don’t you think this imagination is brilliant?

The ingredients are super simple almost everybody has them at home.

 

APPLE CRUMBLE MUFFINS

Dough:

♥ 30ml apple juice

♥ 30ml milk (cow’s milk or almond milk)

♥ 2 apples

♥ 115g smooth butter

♥ 100g sugar

♥ 50g brown sugar

♥ 2 eggs

♥ 120g plain yoghurt

♥ 2 teaspoons of vanilla-extract or freshly grounded vanilla

♥ 220g flour

♥ 1 teaspoon baking powder

♥ 1 teaspoon cinnamon

♥ 1 pinch of salt

 

Crumble and glaze:

♥ 67g brown sugar

♥ 15g sugar

♥ 1 teaspoon cinnamon

♥ 60g butter

♥ 84g flour

♥ 100g powdered sugar

♥ 2 tablespoons of cream

1/2 teaspoons of vanilla-extract or freshly grounded vanilla

♥ 100g powdered sugar

♥ 2 tablespoons of cream

 

You can always adjust the recipe according to what you like. For example I used a little more cinnamon for the dough or you can use almond milk instead of cow’s milk etc.

So let’s start!

Preheat the oven to 220°C and fill in the plate with cupcake cups or grease it.

Now stir white and brown sugar together with smooth butter until you have a creamy mass. Add eggs plain yoghurt and vanilla. Stir it all together until you have a smooth dough.

Take a new bowl and stir all the dry ingredients like flour, baking powder, cinnamon and salt. After that you can mix these two bowls together and add chopped apples as well as the apple juice and the milk.

For the crumble you have to mix brown and white sugar with cinnamon and the smooth butter.

Now you can fill in the cupcake cups with the dough and spread the crumbles over the muffins.

Now start baking the muffins at 220°C for 5 minutes.Then you have to turn down the heat to 175°C and let your muffins in the oven for another 15-17 minutes.

For the glaze stir the powdered sugar together with cream and vanilla. As soon as the muffins are done and cooled down a little bit you can glaze them. The last thing you have to do is the hardest - wait until the glaze has all dried :-)
